Polignano's Carrot
Those
of Polignano a Mare, in the province of Bari, are carrots of many
colors: orange, light yellow, deep yellow, up to dark purple.
The
seed of the carrot is still selected by the farmers and so the
vegetable hasn’t stabilized the orange color as in the seed
industry. Carrots in Polignano a Mare have large sizes, on average
they grow upto a diameter of eight inches, they are juicy and
crisp, with a granular texture like apples. They are harvested by
hand with a large fork from early November until early May.
